just call me rachael freaking ray.
I’m generally not what one would refer to as “domestic”. I buy new underwear instead of doing laundry, I let my room become unlivable before I’ll clean it, and I’ve been banned from using my parents’ new washer and dryer because it took me no less than 5 minutes to figure out how to start it.
Every once in a while, though, I impress myself. Turns out, it’s usually in regards to cooking, so I’m going to call that my “thing” now. Cooking is my thing.
The other day, while grocery shopping, I bought a bunch of random fresh ingredients. While Bee was busy buying Lean Cuisines and 100-Calorie packs, I bought veggies and potatoes and started plotting.
When I got back home and finally made dinner for myself at 11pm, I had an idea in my head about how this all would turn out and I just went with it. It was delicious so I made it again tonight. (I’m easy like that.)
The hardest thing about cooking is the fact that I cook for just one person. It’s tempting to just have a bowl of cereal or make some mac and cheese because really? I’ll eat anything. But now I’ll never have to do that again because all it takes is a couple of ingredients and a stove top and all of a sudden I’m a freaking Top Chef contestant.
Since I was so impressed with myself, I thought I’d share.
Recipe for Jenn’s Made Up Miscellaneous Vegetable Concoction:
Ingredients
- EVOO (extra-virgin olive oil)
- Fresh spinach leaves
- Portobello mushrooms
- Cherry tomatoes
- Red potato
- Fresh shredded parmesan cheese
- Rosemary
- Garlic salt
Process
- Dice a red potato and get that going in a skillet with some EVOO. I have no idea if you are supposed to cook potatoes on a stove but it takes a little while to soften them up so start there.
- As they’re cooking, add a little bit of rosemary and a dash of table salt.
- In another pan skillet thing, add some EVOO and a handful of spinach. It might look like a lot at first, but it shrinks when it’s cooked. (TWSS.)
- Add the mushrooms and tomatoes to the spinach. Tomatoes don’t take long to cook at all so if you’re cooking on a high setting, add those last.
- Throw in some garlic salt to the spinach/mushroom/tomato mixture. If you’re like me and think that garlic salt is the greatest invention ever, you CANNOT OVERDO THIS.
- Once everything is sufficiently sauteed and cooked and all that jazz (I do not know culinary lingo so we’re just going to go with JAZZ), add the potatoes to everything else. Put it all on your plate, top it off with some parmesan cheese, and you’re good to go!

omg, YUM. i pretty much do exactly this once a week when i realize that everything in my fridge is days away from going bad. i just toss everything into a pan and cook it up. usually works out pretty well. go you, rachael ray
You’re a step ahead of me then. I usually think “ooooh I want that cucumber I bought the other day” and then realize “the other day” was two weeks ago and my food is now spoiled. Grrr.
I would totally eat that.

Mushrooms are ESSENTIAL. YOU HAVE TO EAT THEM. Kidding kidding. Ummm add some chicken instead? I don’t know how to cook. I got lucky with this one.
Yummy!! You might want to throw the potatoes in the microwave for a minute or two before chopping them and cooking them in the pan. You’ll get a much faster cook time and a lovely brown crust on the already-a-little-cooked taters :)

You sound like a pro, lady. ;) Experimentation with cooking really is the best way to go. Some of my best meals have been total mistakes made out of desperation when I just grab whatever I can find in the fridge :)
